Lengua is Spanish for tongue and I used to hate it when I was a kid. My mom would just boil up the whole tongue and serve it. You could clearly see what it was with the taste buds all on top, etc. Gross. For you White people the cow tongue was considered trash and you never saw it at the grocery store. We Sun People had to order it special or go to specialty ethnic stores to find it. Butchers practically gave the shit away.

Now all the friggin yuppies have swung full scale onto gourmet ethnic food and low carbon foot print eating and getting back to the land bullshit and no wasting anything. So lengua is viewed as a delicacy and it is god dammed more expensive than steak. Go check it out, even when you can find it a decent cut of lengua will run you more than $20. Outrageous.

I always felt that you get a ton of steaks out of a cow but only one lengua so it should cost more but then Jeff Quinn over at www.gunblast.com (who raises cattle) said that you only get one asshole per cow too so that should cost a fortune. I can’t argue with that logic. Don’t tell the yuppies.

In any case I have come as an adult to really enjoy lengua (figures now that it is grossly expensive) especially in tacos. I was visiting my dad in New Mexico (yes there is a New Mexico and it is part of the United States) and his house servant cooked us up an excellent lengua. First she boiled it, then she peeled the skin off, then she diced it and fried it with some sort of magic South American indigenous spices. This was ladled onto a corn tortilla with fresh diced tomatoes, onions, jalapenos, cilantro and queso fresco (cheese) with squeezed lime juice on top. Awesome. I ate three of them.

Lengua tastes just like fatty beef but has a soft spongy texture which is very pleasing. I think you White people will like it best chopped up and fried in a taco. It is well worth trying.
